Baked mackerel with vegetables


Mackerel – 2

For marinade:

Wine – 1 glass

Honey -2 teasp

Lemon – 2

Soy sauce – 4 oz

Salt / pepper / thyme to taste

For garnish:






Squeeze the juice of two lemons and mix all ingredients for marinade together.

Slightly cut the fish into equal parts.

Put fish in marinade and leave it for 12 hours in the fridge.

On the next day remove fish from the fridge and rinse it and than dry with paper towel and leave it for a while.

Cut each small potato on two pieces and boil it for 10-12 min until it will be half cooked. Add salt to taste.

Cut tomatoes, lemon and onion on the skinny slices.

Put mackerel on the deep baking tray and put pieces of lemon, tomato and onion between cuts.

Cut carrot on the small pieces and put with potatoes on the baking tray. Put olive oil on the top. Add pepper and salt to taste.

Bake mackerel on 355 F for 40 minutes or until golden brown.

The remains of salt will make potatoes skin pleasantly salted.

Put cooked fish on the plate and add any greens that you like.

You can serve this is dish with alcoholic beverages such as white wine or vodka. Bon Appetite!
