- Rice noodles

Chop the garlic.
Shred the ginger on the medium grater.
Cut the eggplant into medium pieces.
Cut the sweet pepper into medium too.
Chop the mushrooms into small pieces.
Heat up a frying pan with olive oil and add the sesame. Fry sesame until golden brown for 2 minutes.
Then add the mushrooms and mix well.
Cook mushrooms for 10 minutes then remove from the stove.
Add olive oil on a frying pan. Mix garlic with ginger and fry for 30 seconds of medium heat.
Then add the eggplant and mix all.
Cook mixture for 5 minutes and add a little salt.
Next add the sweet peppers and mix well.
Cook for 5 minutes and remove from the stove.
Add the mushrooms to the cooked vegetables and mix all.
Boil the water. Add water to the rice noodles and leave for 2 minutes.
Then remove the rice noodles out of the water.
