Shred carrots on a medium grater. Chop the cilantro.
Break the eggs in a bowl.
Add carrots and greens.
Stir, salt to taste and divide mixture into two parts.
Put the frying pan on low heat and add olive oil. Then pour one part of the mixture into the frying pan and cover. Cook for 8-10 minutes.
